Belfry Double Barreled Bourbon Whiskey is a collaborative project with our friends and next door neighbors at Bissell Brothers Brewing. After they age their “Angels with Filthy Souls” maple porter and their “Sigel” oatmeal stout, we take the empty barrels and fill them with our Bourbon Whiskey and let it age for another six to ten months. What emerges is still a fairly youthful whiskey with an extra warmth and complexity that’s wrapped in a touch of vanilla and butterscotch. The texture is soft and silky with an intriguing chewy softness. This one’s a sipper, either straight from the bottle or with a little chunk of ice. Belfry is produced in ultra-small batches and as a limited release—our first batch was a mere 1200 bottles. Stay tuned to our social media feeds to find out about availability and pricing.
Our Bourbon is as straight forward expression of Bourbon as it gets—only three ingredients make up the mash-bill and their proportions unabashedly scream “Bourbon!” Bourbon’s backbone comes from corn and our Bourbon Whiskey tips the scales at a solid 75%. For structure, flavor and a little spicy kick, our Bourbon Whiskey has a relatively high rye component at 21%. The final 5% is malted barley—just enough to make the chemistry work. Still a young spirit at just a little under two years old, our Bourbon Whiskey is surprisingly smooth at 90 proof, yet will still stand up and hold its own in most whiskey cocktail applications.
We love the grassiness, boldness and spice that rye adds to whiskey. Our Rye Whiskey is made simply with 95% rye and just enough malted barley (5%) to make the chemistry work. While still a relatively young Rye Whiskey at just under two years old, there’s a depth, maturity and smoothness that betrays its years without tempering too much of its youthful spirit. At a full throated 90 proof, it’s just fiery enough while still being tantalizingly smooth.This is the bottle we reach for when it’s time for an Old Fashioned or simply a whiskey and a lone ice cube.
The broad appeal and nimbleness of our gin comes from the fact that it’s a blend of two different styles of gin. The base of our gin is in the traditional London Dry style, sharp and juniper forward. The rest of our blend is in the more modern “International” style where the juniper takes more of a backseat and other flavors and aromas come to the fore: citrus, coriander and cardamom are hallmarks of this portion. Together they create a gin that is classic but with a flexibility that makes it ideal for modern and innovative cocktail applications.
Our Silver Rum is a nod to that tradition. Made from American sugar cane molasses and distilled in the style of the British Caribbean isles, it’s a gentle yet full flavored rum with just a touch of texture that takes a little of the edge off of this rambunctious un-aged spirit. While the Caribbean is the spiritual home of Rum, New England is where it flourished. By the mid 1700’s, New England was one of the leading rum producers in the world and in an attempt to hobble the rum industry, the Crown imposed the Molasses Act of 1733 and the Sugar Act of 1764. Coupled with the Tea Tax in 1773, the King set to shaking up a cocktail of equal parts resentment, rebellion and revolution and when Paul Revere went on his wild ride, he stopped at a tavern in Medford for a tot of rum. Re-enacted every year, that may be the real “shot heard round the world."
